Quick & Easy Hot Sausage Sandwiches
This robust sandwich made with Italian sausage, green and red peppers and onions is easy to make and can stay hot in a crock pot for football party guests to eat throughout the afternoon. [NOTE: Italian sausage comes in sweet/mild or hot, so choose the kind according to the spice tolerance of your guests.]
Ingredients
- 2 lbs sweet or hot Italian sausages
- 1 red bell pepper, cored and sliced in strips
- 1 green bell pepper, cored and sliced in strips
- 2 large onions peeled, cut in half and sliced into strips
- 2 cloves garlic, peeled and chopped
- 6 T water
- 2 T olive oil
- ¼ C water
Directions
- Cook sausage in large skillet with 6 T water over medium heat with a lid for 20 minutes, turning occasionally.
- Remove lid and continue cooking sausage, turning often, for 15 minutes allowing the water to evaporate and the sausage to brown.
- Remove sausage to a plate.
- Add olive oil to skillet and sauté garlic, onion and peppers for 5-10 minutes, stirring frequently…do not allow to burn.
- Return sausage to skillet and add ¼ C water and stir.
The sausage and vegetable mixture can then be placed in a crock pot on medium or a chafing dish for guests to serve themselves. Sausages can be served on Italian buns or Portuguese rolls. This recipe should serve about 12 individual sandwiches.
Quick & Easy Hearty Chili Recipe
Chili on a cold wintery day is always a treat. This quick & easy football game party food recipe will please all the big appetites in the crowd. Serve in bowls with sliced Italian bread or rolls.
Ingredients
- 2 lbs lean ground beef
- 1 T olive oil
- 3 cloves garlic chopped
- 2 green bell peppers, cored and chopped
- 1 large onion, peeled and chopped
- 3 stalks celery chopped
- 2 large cans diced tomatoes
- 1 T dried basil
- 1 T dried parsley
- 2 t cumin
- 1 medium can black beans drained
- 1 medium can chick peas drained
- Salt, black pepper and red pepper flakes to taste
Directions
- In large skillet, break up ground beef and sauté in olive oil stirring frequently until browned.
- Add garlic, green peppers, onion, and celery and sauté until tender stirring frequently.
- Transfer to a large pot.
- Add diced tomatoes and herbs.
- Add black beans and chick peas.
- Add salt, black pepper, and depending on preference for spiciness, add red pepper flakes.
- Simmer gently on low heat.
The chili can remain on the stove with low heat or be transferred to a crock pot or chafing dish. This recipe serves about 10-12 bowls.
